Cream of Broccoli Soup - Vegan

This easy soup is full of vegetables for an incredibly healthy and hearty first course. You can blend it until it is super smooth or leave it a little chunky. This can also be made gluten-free by substituting gluten-free flour.

Ingredients
  

  • 2 Tbsp olive oil
  • 2 Tbsp plant-based butter
  • 2/3 cup carrots chopped
  • 2/3 cup celery chopped
  • 1 med onion chopped
  • 1 cup potato chopped
  • 2 cloves garlic minced
  • 6 Tbsp flour
  • 4 cup vegetable broth
  • 2 cup soy milk
  • 5 cups broccoli chopped
  • 1 tsp salt
  • ½ tsp white pepper

Instructions
 

  • Melt butter with oil in large pot. Add all chopped vegetables and sauté over medium low heat until softened, about 15-20 minutes or so. Stir frequently so the vegetables do not brown.
  • Add flour, mix well. Add broth, milk, broccoli, white pepper, and salt. Bring to a boil, reduce heat and simmer until all veggies are soft, about 50 minutes. Use an immersion blender and blend to your liking.

Notes

Another alternative is to hold back 1 cup of the chopped broccoli and steam it separately until soft. You can then add these pieces to the blended soup for creamy soup with chunks of broccoli.
