This is a beautiful summer appetizer. We frequently pair it with prosciutto and melone or a salumi tray. The fresher the basil, tomato, and olive oil, the better!
Slice tomatoes and mozzarella cheese about ¼" thick. On a serving plate, make overlapping layers of cheese and tomatoes alternating each layer. Drizzle olive oil on top and garnish with fresh basil leaves. Serve.

This can be made well ahead of time, just keep it covered, in the refrigerator.
