This classic Italian appetizer is improved by using the freshest ingredients possible. If you have your own basil plant, pick the leaves in the morning before the sun dries them out too much. Use garden fresh tomatoes too, if possible, and the best quality olive oil.

This is a beautiful summer appetizer. We frequently pair it with prosciutto and melone or a salumi tray. The fresher the basil, tomato, and olive oil, the better!

Ingredients
  

  • 4 tomatoes any flavorful kind will work
  • 1 lb mozzarella cheese, fresh
  • 2 tbsp olive oil, extra virgin
  • basil leaves, fresh

Instructions
 

  • Slice tomatoes and mozzarella cheese about ¼" thick. On a serving plate, make overlapping layers of cheese and tomatoes alternating each layer. Drizzle olive oil on top and garnish with fresh basil leaves. Serve.

Notes

This can be made well ahead of time, just keep it covered, in the refrigerator.
