Mustard-Grilled Pork

This is a very quick and easy main course. Be careful not to overcook, however as it can go from perfect to too dry very quickly. Even when this is done right, it does tend to look dry, but really isn't. And there is no extra sauce to pass along side, so you really want to ensure the pork is just cooked through, but no more.

Ingredients
  

  • ½ cup Dijon mustard
  • ¼ cup mayonnaise or vegenaise
  • 1 tbsp tarragon, fresh, chopped
  • 1 tbsp brown sugar, light, packed
  • 2 lbs boneless pork loin, trimmed cut into ½ inch thick slices

Instructions
 

  • Spray grill rack with nonstick spray. Turn on heat to medium-high.
  • Whisk mustard, mayonnaise, tarragon, and brown sugar in medium bowl. Brush mustard sauce generously on both sides of pork cutlets.
  • Grill pork until just cooked through and firm to touch, 2 to 3 minutes per side. Transfer to plates.

Notes

To make this egg free, you can substitute vegenaise for the mayo.
