
This is a naturally gluten-free dessert that is especially delicious in the fall months when fresh pears are in season. It is flexible enough that you can use your favorite artisanal cheese.

Pears in Honey Caramel
Ingredients
- 4 oz plant-based butter, unsalted or dairy butter
- 3 bosc pears, peeled use firm, but ripe pears
- 3 ½ tbsp honey
- 4 oz artisanal cheese (bleu, brie, goat cheese, or other selection)
- 3 tbsp pine nuts
- 1 pinch sea salt
Instructions
- Heat butter in a large, nonstick skillet over medium-high heat until it begins to brown. (Note that plant-based butter does not brown the same, so just heat for 3-5 minutes.) Add pear halves to skillet, cut side down. Drizzle honey over pears and swirl pan slightly to blend butter and honey. Reduce heat to medium, cover, and cook until pears are tender when pierced with a paring knife, swirling skillet occasionally and adding a few tablespoons of water to skillet if caramel sauce turns deep amber before pears are tender, about 12 minutes.
- Transfer pears, cut side up, to serving platter. Top pears with cheese. Return skillet with caramel sauce to medium-high heat; add pine nuts to skillet and sprinkle lightly with sea salt. Cook until sauce in skillet is brown and bubbling about 2 minutes. Spoon sauce over pears and serve.
