Crisp cucumber slices marinated in apple cider vinegar and a touch of sugar, creating a perfectly balanced sweet and tangy flavor profile. You do need to let the cucumbers drain for an hour, but that means you can do this the day before or in the morning.

This refreshing dish can be used as an appetizer or a side dish. It has a delicious combo of both sweet and tangy flavor.

Ingredients
  

  • 1 large cucumber peeled and thinly sliced
  • ¼ cup apple cider vinegar
  • 1 Tbsp sugar
  • ¼ tsp pepper
  • 1 tsp salt
  • 1 Tbsp parsley chopped for garnish

Instructions
 

  • Peel cucumber and slice very thin. Layer cucumber slices in a shallow bowl or pie plate sprinkling each layer with salt.
  • Weigh down the cucumbers with several plates and let stand at least one hour. Put in refrigerator if it will stand longer than an hour. Drain.
  • Meanwhile, mix vinegar, sugar, and pepper, add to cucumbers and toss. Place in serving dish and sprinkle with parsley.
